“We found records of my ancestors in Chamonix going right back to the beginning of the archives. Before that, there is no trace: so that makes 6 or 7 generations of Chamonix Carriers.

Originally, they were peasant farmers – my great-grandfather was a carriage driver, carrying tourists around before he founded the Hôtel du Chemin de Fer.

I grew up in that hotel, before it became the famous Hameau Albert 1er. It was a great place, like a little cocoon. And then with my parents and family, I started up the first four-star hotel in Chamonix, where we are right now, the Auberge du Bois Prin.

Every morning I get up admiring the magical view of the mountains.

I’ve got a large vegetable garden here, above the hotel. My grandfather did the same, so did my father and now my brother. In fact, we’ve all had vegetable gardens. No fertiliser has been used for 30 years – I put in a bit of manure and some lime to make the earth less acid, and that’s all.

We use the garden vegetables and flowers in the kitchen and the customers love them.   ”

Hotelier at the Auberge du Bois Prin, Denis is also an excellent chef and gardener. He provides a warm welcome in his hotel facing Mont Blanc, with its gastronomic restaurant featuring organic food.

“There’s a walk you can do starting from Le Brevent, walking down to the Vallée de la Dioz and then back up towards the pass that overlooks the Lac Blanc. There’ll be nobody there except chamois and ibex!”
